Alligator BBQ

In the U.S. alligator meat has been consumed historically and in contemporary times in Southern cuisines for decades. The meat itself has been described as lean and high in protein. The texture is firm and had been described as having a mild flavor. Some say it tastes like chicken some say more like fish and can be very chewy depending on the way it’s cooked.

In Florida, alligator meat is very popular. With the alligator population rampant, hunting and consuming gators is legal. This barbecue delicacy has been making its way across the country and into barbecue competitions. It is simply prepared like any other cut with a dry rub and smoked till the meat fall off the bone. I have personally never tried alligator meat but as they say, don’t knock it till you try it.
